Wine is not a jail or a virtualization environment of any kind. Wine does
not make any efforts to limit Windows application's access. See the FAQ.
Moreover Wine automatically adds drive mappings for new connected devices,
making them accessible for Windows applications. You have to use native OS
facilities to limit access to places that you don't want the apps can reach.

Regarding other breakages do grep for z: in the registry.
