Similar problem here using Ubuntu 10.04.3 LTS and Wine 1.3.26:

starting winecfg, selecting the audio tab and then 'Test Sound' with ALSA
checked gives the following:

1. error popup: "Audio test failed!"
2. console output:

fixme:alsa:AudioClient_GetMixFormat Don't know what to do with 8 channels,
pretending there's only 2 channels

At least nothing hangs and I can exit winecfg on the normal way.
