Before seeing this ticket I have opened a related topic in the forum:

Currently it is a little tricky to change the default timeout. The WINESERVER
environment variable seems to be not working correctly as it would otherwise
server as a workaround for this problem. But instead of having an environment
variable that controls just a flag if the persistence should be disabled or not
it would make more sense to control directly the timeout (as this would
implicitly include such a flag).
