Winex11.drv: get rid of hard-coded bitmap GCs

Hi,

This patch moves GC selection to a helper function. Before various
functions hard coded the GC or used a BITMAP_GC macro. This isn't
flexible when we need more GCs e.g. when we add 32-bit pixmap support.
