mmdevapi/tests: Perform capture protocol tests in shared mode.

Let's add more tests!

Doing so, I noticed that capture overflow handling is broken in winealsa.
I'll expand on that another day, with a partial patch.

I'm not sure whether I added work-arounds for all test failures reported by users, but
I definitively thing Wine has been waiting too long already for some capture & rendering tests.
