I assume you checked out
http://www.winehq.com/download/.
The best solution I can think about now is to get
releases (see section "Source" on the page) and with
each release get diffs in the same way.

Even if you won't be able to use anything else this is
still not a bad option. I know that some Wine
developers worked (still work?) in this way.

Plus, you can access CVS online at
http://cvs.winehq.com.
