Hello Robert!

You could use 

wineprefix --prefix=~/somename

to create the "bottle" and then in bash:

WINEPREFIX=~/somename  winecfg

WINEPREFIX=~/somename  wine filename.exe

or 

export WINEPREFIX=~/somename

winecfg
wine filename.exe


in any case you've to set WINEPREFIX to access your new "bottle"
