Great news! Turns out I had a bad install of Ubuntu 8.10 - I've completely reinstalled everything, and I've got it working perfectly without any particular tweaking. Wine is running version 1.0.1 now, and everything is beautiful. Thanks, everyone, for the help in getting this going again.
