Most of the spam coming my way is trapped by my ISP's greylister, but
more than half of the rest is coming from the wine-users list. Recently
the spammers have started hijacking subjects from current threads and
may be forging the names of legitimate list participants as well. IOW
these lowlifes are forum members and/or signed up to the list: I've seen
spam from both input methods.

Often, the only way of spotting this spam is to check the message body
for inappropriate URLs and spammy phrases.

Thats spam for sure. A few months back we were deluged by some weenie
pushing this crap but its recently made a comeback. 

It would be a good idea if all forum and mail list posts were run
through Spamassassin (and maybe ClamAV as well) before being added to
the forum and sent to the list. The spam should be slung in the bit
bucket and silently lost. A "three strikes and you're unsubscribed" trap
would be a good idea too.
