Pretty much any program you want to run 'fullscreen' must do it in a virtual desktop on Mac OS X... this is because of X11/Xquartz limitations... it doesn't implement RANDR fully, so apps cannot change full screen and rootless modes, nor can they change the resolution.  They can change the resolution on a virtual desktop window though.

The people who work on Xquartz don;t seem to want to add that functionality, its been a requested feature in their database for 2 years.
