The missing packages from that list were:
# aptitude install libxcomposite-dev libcursor-dev libxext-dev libxinerama-dev libxrandr-dev libxrender-dev libxxf86vm-dev

I was still getting the error, but I found the Debian sid section on this (http://wiki.winehq.org/WineOn64bit#head-64ba498d52dd0a3ccae1c52c5d913d7aa692f9b1) page (I'd missed it before).

Installed successfully now. :-)
