Did you happen to install the PDF/XPS extension? Because http://bugs.winehq.org/show_bug.cgi?id=17464 suggests that may cause symbol input not to work.

Copy it to Wine's /windows/fonts directory. You should probably also run winetricks allfonts, as having symbol.ttf as the only font in that directory can cause other problems.
