First:  Is the phone recognized as a device in Linux?

Second:  Without the USB device patch, the only part of your phone that Wine will see is the mass storage device (usually used for photos, if your phone has this capability) and maybe the phone listings.

Third:  If the phone needs 'special' drivers, they will not, for the most part, work with Wine.
