For Ubuntu packages, there's http://wine.budgetdedicated.com/archive/
(don't know about debian)

Note that it's not possible to have different Wines installed on a
machine without compiling (unless you start fiddling with path, env
variables, ..., which is even more tedious than plain compiling IMO)
