yes, you can intall many times with varius prefix: 
example:

env WINEPREFIX="/home/$USER/.office01" wine "/home/$USER/office2007/setup.exe"
env WINEPREFIX="/home/$USER/.office02" wine "/home/$USER/office2007/setup.exe"
env WINEPREFIX="/home/$USER/.office03" wine "/home/$USER/office2007/setup.exe"

but the shortcuts maybe not run correctly; yo need first erase all 
rm -rf $HOME/.local/share/applications/wine/here path office
