Well, when I run Acrobat Pro 6 in Windows, with MS Office installed, I get
dialog boxes saying "loading the application that created the document". So
yes, Acrobat Pro is loading and using Microsoft Word as part of the conversion
process.

Question: how should wine respond to this sort of feature? Should it look for a
wine-based MS Office install? Should it give a message indicating the nature of
the error? Should it attempt to fool Acrobat Pro by loading, say, OpenOffice
instead? How, exactly, does Acrobat Pro use Microsoft Word code to convert
documents?
