I did some testing that I was able to do.

Wine 1.1.0 + iTunes 7.6.2 = Bonjour/Airport Express works
Wine 1.1.1 + iTunes 7.6.2 = Bonjour/Airport Express don't work
Wine 1.1.5 + iTunes 7.6.2 = Bonjour/Airport Express don't work
Wine 1.1.9 + iTunes 7.6.2 = Bonjour/Airport Express don't work

Wine 1.1.0 + iTunes 7.7.0.43 = Bonjour/Airport Express don't work
Wine 1.1.0 + iTunes 7.7.1.11 = Bonjour/Airport Express don't work

Once installed 7.6.2 that works with Apple Airport Express, it can't be updated
to anything.

So, now I have Aiport Express up and running but new wine versions are
handicapped with Airport Express.
