Simply start Wine using a command like:

WINEDEBUG=+imagehlp,+wintrust,+crypt wine "C:\Program Files\Steam\steam.exe"
1>&2 2> ~/steam-debug.txt

updating any paths as appropriate. This will store the log in a file called
steam-debug.txt in your home directory.
