This mean the bug is in alsa-pulse plugin if you said "If I set it to ALSA,
Spotify always crashes when I attempt to play a track." 

you have to provide a wine debug log and the full pulseaudio server log to find
out why alsa-plugin did not work

pulseaudio -k;pulseaudio -vvvv
