Just in case that helps those of you on the case.

Using Wine 1.2 (Ubuntu Lucid release) you can have all of the feature (but the
top) working such as new tab, debugger screen... By setting the reg key
  HKCU\Software\Wine\Direct3D\PixelShaderMode = SZ "disabled"

This cause Safari to remove the "top" feature by the way.

my bottle setting:
 rm -rf .wine
 winetricks fontfix fontsmooth-gray nocrashdialog
 wine SafariSetup.exe
 regedit pixelshaderoff.reg


safari version 5.0.2 (7533.18.5)
I have changed also the "New Tab" to "Empty Page",
and for cosmetic Apparence / Font smooting to "light" in Safari
