I have seen a problem with the textures similar to what you describe.  It
turned out to be the game executable and the game data were different versions,
possibly caused by an incomplete upgrade.  I uninstalled the game through
'Uninstall Wine Software' and then installed from a full download from
http://download.angrybirds.com/ .  The files in 'users/<username>/Angry
Birds/', settings.lua and highscores.lua, remain untouched, so you don't lose
your game progress.
