You may want to try wine-staging to see if the revert patches for bug #35718
fix the reported problem.

I'm also using nouveau and the patches from staging fix a similar problem in
RCT (GOG.com version).
As for bug #39541: I've never seen this kind of X Error when starting RCT with
nouveau.

Also, please check whether the original demo version has the same problem on
your system:
