If your application is working as expected the debug output can safely be
ignored. It is absolutely normal that the output of Wine is very "noisy". On
the other hand, if your application is not working as expected in current
development and staging versions, it deserves a separate bug report (if the
issue has not been reported yet). Our repositories provide packages for all
three versions (winehq-stable, winehq-devel and winehq-staging), so doing the
necessary tests should be pretty easy.
