You could try to set the MaxVersionGL registry key
(https://wiki.winehq.org/Useful_Registry_Keys) and see if that helps.
Unfortunately the macOS OpenGL support is sketchy at best (and our d3d11
implementation is still work in progress) so it might not be enough.
