Either enter the game directory first and launch the game from there:
WINEARCH=win64 WINEPREFIX=/home/koz/.gog/mm6 wine MM6.exe

or if you prefer starting the game from elsewhere:
WINEARCH=win64 WINEPREFIX=/home/koz/.gog/mm6 wine start /unix
~/.gog/mm6/drive_c/GOG\ Games/Might\ and\ Magic\ 6/MM6.exe
