Since you're using Lutris, you can use Proton-4.21-GE-2.
Download https://github.com/GloriousEggroll/proton-ge-custom/releases
Extract folder to ~/.local/share/lutris/runners/wine
Start Lutris > Right Click GTA V > Configure > Runner Options > Wine Version:
Proton-4.21-GE-2.

There will probably be an official Lutris Wine version with this patch shortly.
