Well.. I'm proud to announce this was a me issue: I figured I’d retry and
fiddle with the Lutris settings, well… Whaddaya know, I found a way to bring
back the screen.
Right click League in Lutris -> Configure -> System Options -> Adjust below
values like so:
    Disable Lutris Runtime = true
    Prefer system libraries = false

I consistently log in and update the launcher/client/game now.
