In addition:

Once I call `~/wine-dirs/wine-build3/wine32/wine` and the other just `wine`.
But `wine` ist the installed version of this build. (copy paste hangover)

$ wine --version
wine-5.15-34-g8f3bd63b52

$ ~/wine-dirs/wine-build3/wine32/wine --version
wine-5.15-34-g8f3bd63b52
