Think i have to conclude the same. I am using a HDMI -> DVI cable to my 2nd
monitor, but have a normal range of resolutions on that port, so it has to
hinge on the gfx adapter actually having a DVI port in use i guess.

It might be that the driver is not able to read the correct EDID from your
monitor or something?
Are you able to select more than 1 resolution for your (DVI) monitor in the
nvidia-settings app?
If you are, you could try to dump the EDID for the monitor, and use it in your
xorg.conf file perhaps..
