Same reason as most of the rest of this series; I'd like to allow for
multiple mapping paths (e.g. alternatives to WINED3D_CS_OP_MAP) without
having to duplicate a whole bunch of code.
Storing fields in wined3d_resource/wined3d_sub_resource is also nice
because it means we don't need a bunch of extra branching or
sub_resource_ops. But I guess it does take up more memory...
