As discussed with Mike, here's an update to Wine arch & internals 
documentation

IMO, it still misses:
- detailed information on new FS
- information on 16 bit tasks handling
- information on DOS handling (and DPMI...)
- beefing up a bit ntdll & kernel32 doc
