Hm... this is a wierd thing.  Are you sure that you've changed the
~/.wine/config for the user you're running it as.  If you "su" to root in order
to run something, then you have to have the same information in your config for
root, as you do as your user.  This is about the only thing I can think of.

Second, I don't know why it would be ignoring your $DISPLAY variable.  What is
set to anyways?  Perhaps wine is ignoring it because it doesn't look like a
valid $DISPLAY value.  In any case, if you're running wine on the same machine
as you're displaying it on, you shouldn't have to change the $DISPLAY variable,
and it should default to something like ":0" or ":0.0"
