If you mean the registry files on your original windows
partition, I think you can't. It's accessed read only.

If you mean the real Wine registry, these are basically
2 text files in your ~/.wine directory : system.reg and
user.reg. You can edit them with any editor, or you
can use regapi to import data exported from your
original windows registry (using regedit)
