I think it is better to keep both versions of the
documentation. Just mark them explicitly - Intellicad
2000, Intellicad 2001.

By definition "Open Source" is when there is no
restrictions on modifications (see
http://www.opensource.org). As I understood from your
description this is not true - there are limitations
who can modify the source.

This is just an explanation of the terms and not in
any way offence against the license.
I like too that license is cooperative and pretty
open.

You can try to find volunteers on this mailing list or
among people, interested in the application. 

Alternatively you can try to interest the consortium
in sponsoring porting of the application. This can
help to involve people who would like to help to port
the application, but can't afford to spend so much
time.
