I'm not exactly sure what you mean by "run wine in full screen mode",
but if you would like to run a program in full screen you have to change
the config.

For starters I would recommend to apt-get winesetuptk if you're not
familiar with the config yet. Then you should apt-get wine-doc and rtfm
at /usr/share/doc/wine-doc (no offense). Because there will be plenty of
situations where you want to change something in your config, so you
might as well get to know the basics.

As for your problem:

Open ~/.wine/config in your favorite text editor.
In the [x11drv] section there are two entries like this

; Allow the window manager to manage created windows
"Managed" = "Y"
; Use a desktop window of 640x480 for Wine
;"Desktop" = "1024x768"

if you comment out the "Desktop" thing or set it to "no" you should be
okay, the "Managed" part should be set to "Y" for starters, if you run
into problems with specific apps you can add an application specific
configuration at the bottom of your config.
Keep in mind that all this can be done by winesetup from the package
winesetuptk, which is what you should use as long as you don't really
know what I'm saying here.
