I also have tried several times in the past to install IE6. For fun I am 
trying again and found these problem while running current git version 
of wine.

Started with new .wine found inseng.dll on the net and put it in 
window/system32 after running wineprefixcreate. Left default of win 2k.
I downloaded ie6 service pack 1 to the new wine c:\ie6setup.exe and ran 
from there. The installer gave and error about a corrupted download. 
Running from my kde desktop also gave the same problem. I moved it to 
c:\window\temp\ie6setup.exe and running from there worked.

No options were shown when installing to keep from installing outlook.

from c:\Program Files\Internet Explorer\ running wine IEXPLORER.EXE runs 
the built in iexplorer. Renaming it to IEXPLORERx.EXE also seems to end 
up running the built in one.
