The way to remove disk 1 is to give the command
  wine eject
in another window.   (It's probably wise to avoid cd'ing
into the root directory of the cdrom when installing
if you can avoid it, btw.)

In what way?   What symptoms are you seeing?

Last time I tried it
( see http://bugs.winehq.org/show_bug.cgi?id=6764 )
it made it all the way through the first disc and
nearly all of the second before it crashed,
and I was able to try the app.
