The wiki has a section dedicated to OS X. See:

http://wiki.winehq.org/MacOSX/Installing if you just want to skip straight
to using a prebuilt version of Wine for OS X.

http://wiki.winehq.org/MacOSX/Building explains how you can compile it
yourself if you like.

None of this will work if you're on a PPC mac though.
