Most likely because you don't have any. Verify what's all available by running 'xrandr'. If it lists only one resolution you'll have to fix your xorg.conf file.

If the above won't fix the problem, make sure you don't have any conflicting drivers (mesa-*). And that you have 32-bit driver libraries installed (Wine is 32-bit app and requires 32-bit libraries).
