Sorry, when you said you were "attempting to download iTunes via Wine,"  I thought you meant you were trying to download the installer  using Wine's browser. Apparently that's not what you meant, and you have already downloaded and installed the app.

As far as tweaking iTunes, I've never used it, so I can't be much help there. I can tell you that the "fatal error" message box means something crashed, and the "everything goes black" is a known bug affecting Quicktime:  http://bugs.winehq.org/show_bug.cgi?id=1347

You can file a bug for the crash, if none of the existing bugs match what you're seeing. http://bugs.winehq.org/buglist.cgi?quicksearch=iTunes
You could also try contacting the person who submitted the test report you're basing your assumption that it works on to ask if he used any tweaks that he neglected to mention.
