if reading the pages that were linked to you doesn't answer your questions, then it'll just take you some more time and research.  If you want good working Wine that is really easy to use, I'd suggest just buying Crossover... You really need to do a lot of reading and learning on your own, there is little we can do to help beyond telling you what to read.

By default you will have to download Wine source code and compile it yourself... its all command line.  Even if you install and use a package service like Macports, it just automates some of that, and still builds from source.
