It's probably working like it should. What you did is installing plain wine, rather than the ubuntu packages. Plain wine doesn't add any menu entries (the menu entries are ubuntu specific), so you won't find it there for sure. Just try something basic through the terminal, like "wine notepad" if you want to be sure it's working.
