Try something like this:

(from terminal WITHIN your home directory - do not try this while in CDRom directory)

wine start /Unix /path/to/install.exe (or wethever the name is)

When it asks you for second CD do this:

wine eject or wine eject drive-letter: (if you have multiple cdroms)

That should eject the CD, simply change it, mount and installation should continue.

NOTE:

This will probably NOT work if you try this while in directory where cdrom is mounted, every other dir should do just fine.
