Wine's default Windows directory structure is found in ~/.wine, not ~/documents/.wine.  Why were you expecting it there?  What Tax Program are you using?

See my comment above.  Wine's default C: drive is in ~/.wine/drive_c which is linked in ~/.wine/dosdevices/c::
