sorry, but the Screen resolution has little to do with the Size of displayed content. It just indicates, how many parts (called pixels) your screen is divided in. The size of these parts depends on the size of the screen. 
e.g. Yor (Linux) screen resolution is set at 1024x768. Now you create an emulated desktop with wine and set its resolution at 800x600. This means, on your screen, there are 1024 pixels in a row and wine uses "only" 800 of them. The remaining 224 pixels are of no interest for wine, as they are outside of it's emulated desktop. You'll see your linux-system on them, just as if the Wine-desktop was any other window.

So there are two possible solutions for your problem:

1. decrease the Screen resolution of Linux (this will result in fewer, thus larger pixels)
2. use some magnification tool. just search the internet, you'll probably find one soon.
