Ubuntu almost certainly has a method for creating an application
launcher for your game though I don't know where it is or what its
called because I don't use Ubuntu. On Fedora it is part of the "Main
Menu" system tool.

IMO the best way to do all this is to write a wrapper script for the
game and point the launcher at that rather than the EXE. See

and/or search the Wine forum archives for "wrapper script".
