Why so difficult? You don't have to mess with compiling from source under Ubuntu, and with 9.10, there's even a special precompiled package of the (almost) latest version!

Open Synaptic package manager, select the wine1.2 to get a recent beta.

Before you do so, open the Software Sources tool and enable all repositories (universe, restricted, multiverse).
