openSuse 11.2 is ok. I'm using this for years and i probably stick to it.
Why don't you compile the wine sources?
in the current wine: something simple as: make install
( read the readme ) and for removing simply: make uninstall

Very easy and you have the current version! In case you'd removed the sources you could also search for wine: whereis wine and delete those files.
